Stir-fried glass noodles (pad woon sen)

Pad Woon Sen is a stir-fried glass vermicelli noodles with eggs, meat, seafood and vegetables. 

This dish is very popular at Thai restaurants and you can find it any where in Thailand. 

The dish is not spicy and very tasty but it can also be made spicy

The dish is low- in carb because Woon-Sen or mung bean noodle is made from mung bean that has protein in it and not carbohydrate like rice noodle or pasta.

Mung bean noodle are called clear noodle or glass noodle because the noodle itself is clear in color just like glass. It has very little taste by itself, but absorbs sauce and water very well. 

You can find it in Asian grocery or super market but now a day most regular super market will have it (super store).



Ingredients:

Bean Vermicelli Noodles
10-15 Prawns (peeled)
1 small bag of bean sprouts
1 green onion (cut 1 inch)
½ bag glass noodle (bean vermicelli)

2 tbsp. soy sauce
1 tbsp. fish sauce
2 tbsp. oyster sauce
1 tbsp. minced garlic
2 tbsp. cooking oil




Cooking Instructions:
Step 1: Soak the vermicelli noodles (glass noodle) in warm water for about 5-10 minutes.
Step 2:  Drained the noodles and cut the noodles in half.
Step 3:  At medium-high heat, add cooking oil to a wok, followed by chopped garlic, stirred until golden.

Step 4:  Add prawns, followed by the glass noodles.
Step 5:  Add all the sauces, mixed with the prawns and the noodles.
Step 5:  Add some water, if the noodle is under cooked or get too dried
Step 6: Add bean sprouts, followed by green onion for garnish
Step 7: Taste the food, if not flavorful enough add more sauces.  You may also add a little bit of sugar if you like your food sweeter.

Panang Curry

About the Curry:
  • Panang Curry is one of the most popular Thai curry dish.
  • It is a thicker curry sauce (therefore; should not be runny).
  • It is really easy to make. 
  • The traditional thai way we don't actually add vegetable to it, just Thai herbes and spices.
  • We served all our cury dishes with steam rice or steam noodle
Ingredients:
Panang with Pork
  • Panang Curry paste (1-2 table spoon)
  • meat (chicken, pork, beef or seafood)
  • ground cumin and coriander (optional)
  • peanuts
  • lime leaf and thai basil (optional)
  • carrot, red, green peppers (optional)
  • fish sauce
  • sugar
  • peanuts
  • coconut milk (1 can)
Let's get started:

Step 1:  At medium to high heat, put the thickest part of the coconut milk in the frying pan, add the panang curry paste.  Blend the curry paste with the coconut milk, let it boil till the sauce is thicken.

Step 2:  Add your choice of meat, fish sauce and mixed it together until the meat is cook.

Step 3:  Add all the remaining ingredients: the vegetable, lime leave , basil, peanuts, cumin and coriander and a prinkle of sugar.  Let the sauce come to a boil so the remaining ingredients are well blended together, give it a taste and it is ready to served.

*note the curry sauce should be thick and not runny.  If the curry sauce is too dried while cooking it add more coconut milk.  All the herbes and spices, you should only add a few sprinkle to the dish.  It is use for the aroma, garnish and to enhance the taste.  If you used too much of it the dish won't taste good.  Remember less is more*

How to make Pad Thai

Simple Steps to make Pad Thai

  • The easiest way would be to buy the ready-made Pad Thai sauce in the grocery store
  • The harder part is choosing which Pad Thai sauce to buy since there are so many to choose from because you don't know which one will taste good
  • If you choose to make Pad Thai from scratch, a lot of ingredient in Pad Thai are optionals

Part 1:  Making the Sauce
Ingredients:
  1. Dried Tamarin ( can used white Vinegar as a substitution)
  2. Sugar
  3. Fish Sauce
  4. Ketchup (optional)
First you must soak the tamarin in water till it is soften.  If you choose to use white vinegar, you can skip this step.  After the tamarin is pre-soak in the water for about 10 minutes, you mix the tamarin and water together till you get a thick tamarin sauce out of it.  Throw away all the big chunk of the tamarin because you will only need to juice.

Second you put the tamarin juice or white vinegar into a pot (at low eat), add sugar and then fish sauce.  Stired it until it come to a boil.  Let it cool.  The sauce should taste sweet with a vinegary after taste and it shouldn't be too runny.  For color you may also add a little bit of ketchup to the sauce.

Part II:  Making the Pad Thai
*Serving 2-3 people*

Ingredients:
  1. Pad Thai noodle (1/2 a package, about 200 gr)
  2. Eggs (2)
  3. Tofu (firm or extra firm-1/2 a package)
  4. Meat ( could be chicken or prawns)
  5. green onion (optional)
  6. finely chopped garlic and red onion (shallot)
  7. Cooking oil
  8. Bean Sprout
  9. Peanuts
  10. Dried chilli (optional)

Let's get started:

Step 1:  soak the dried Pad Thai noodle in water until it semi soft (used luke warm water)

Step 2:  put the wok on the stove at high heat, add chopped garlic and red onion.  Stir well till it golden.

Step 3:  add tofu, you choice of meat and mixed it together until the meat is cooked. Add eggs and mix it together.

Step 4:  add the noodle, once the noodle is soften, add the Pad Thai sauce, mixed it really well.  When the noodle is cook add beansprout and green onion.  Stired and mixed all the ingredient together, if it's not salty or sweet enough, you can add more sugar or fish sauce.

Step 5:  Garnish with peanuts, chilli, beansprout and lime.

*note you may keep the left over sauce for later used*
